1 tablespoon dry mustard
1 tablespoon paprika
1 tablespoon dark brown sugar
1 1/2 teaspoons garlic powder
1 1/2 teaspoons onion powder
1 1/2 teaspoons celery salt
1 teaspoon cayenne pepper
1/2 teaspoon ground allspice
@paulgonzales5830 use ketchup if you like. Or nothing at all.
forgot to remove the membrane. Leaves a chewy leather layer if you don’t get it off before cooking

just guessing that you add a few coals here and there? to maintain the proper temp?..you dont show when you add it with the wood ? i would imagine just check the temp gauge….somehow i know my friends will thank you..:)
